Honeydew Arugula Salad with Herb Goat Cheese Lemon Juice & Dill

Featured Ingredient: Arugula

One ounce of fresh arugula (about 1 1/2 cups) provides an excellent source of Vitamin K, a good source of Vitamin A, and contributes about 7% of your daily recommended folate and Vitamin C intakes.

Often described as having a “peppery” taste, arugula pairs well with complimentary sweet ingredients. The honeydew and goat cheese worked well. I used fresh lemon juice here but balsamic vinegar or vinaigrette also taste great with these greens.
